Every year on March 17th the world joins in unison to enjoy a bit o’ the craic.
Bands tune up the cèilidh, Guinness flows like water and in some cities the rivers run green! The date signifies St. Patrick’s Day – the patron saint of Ireland – and whether you live on the Emerald Isle or elsewhere in the world, you can be sure that on that day, somewhere close to you, there will be one almighty party.

At CLC World we don’t mind letting our hair down once in a while so we’ve put together a green-themed concoction of cocktails to get you inspired for St. Patrick’s Day 2017.

Four Leaf Clover

Nothing symbolises ‘the luck of the Irish’ more than the four leaf clover. If you’re planning on hosting a St. Patrick’s Day celebration then this cocktail is sure to get people mingling! It’s as sweet as the sugar syrup and as sharp as the lime juice – the perfect combo for getting the party started.


  • 60ml Bacardi white rum
  • 30ml Copella apple juice
  • 25ml freshly squeezed lime juice
  • 15ml honey sugar syrup or spoon of honey
  • 1 dried clove

Method: muddle your clove with a pestle and mortar (or the flat edge of a thick blade) and put it into the base of your glass. Add in rum, apple and lime juices and stir. Then add in your spoon of honey and use the spoon to give your mixture a thorough stir. Pour over ice to serve.

The Lucky Leprechaun

Charm and folklore are an integral part of Irish culture and you’ll certainly be charming your guests with this spritely little number (and we don’t mean the Leprechaun!). The melon liqueur Midori makes an appearance again, this time teaming up with coconut and pineapple flavours for a not-so traditional Irish number.


  • 25ml Southern Comfort
  • 25ml Midori
  • 15ml Malibu
  • 150ml pineapple juice
  • Dash of Blue Curacao
  • Lime wedge for garnish

Method: nice and easy here. Pour your Southern Comfort, Midori, Malibu and pineapple juice into a glass or shaker and mix well. Top up with your Blue Curacao and give it a final stir before garnishing with a lime wedge.

Emerald Fizz

Simple to make and even easier to sip down, an Emerald Fizz is our first cocktail on the list to use Midori (which you’ll see featured again). This fresh, light and most importantly, green cocktail will add some visual impact to any party.


  • 50ml vodka
  • 25ml Midori
  • 50ml lemonade
  • 50ml soda water
  • Splash of orange juice
  • Spring of mint for garnish (optional)

Method: mix your vodka, Midori and lemonade into a high ball glass over ice and stir well. After this you’ll need to add in your soda water and splash of orange juice and mix well. Add optional spring of mint for garnish.

Midori (St. Patrick’s Day) sour

Available from the Sunset Lounge at our very own CLC Club La Costa World, this cocktail is the brainchild of one of our mighty mixologists and goes down very well on Paddy’s Day (or any other for that matter!), this whiskey-inspired Midori sour slips down smoothly and is delightfully moreish… although it does pack a punch!


  • 50ml Jameson’s Irish Whiskey
  • 25ml Midori
  • spoon of sugar syrup (or fine sugar)
  • Generous splash of lemon juice

Method: first pour your whiskey, Midori and sugar syrup (or sprinkle of fine sugar) into a tumbler and mix. Then add a generous splash of lemon juice. Mix this all again and serve in a rocks glass over ice.


You know when the music is blaring, your guests are flying and the craic is mighty… this is the one! The St. Patrick’s Day Punch to rule them all. It’s almost as good as a pint of the black stuff. Almost. With a blend of five spirits the mix of orange juice and Blue Curacao fuse to create a green cocktail of biblical (or at least patron Saint-worthy) proportions.


  • 25ml gin
  • 25ml white tequila
  • 25ml white rum
  • 25ml vodka
  • 50ml Blue Curacao
  • 100ml orange juice

Method: Fill your high ball glass with ice and pour in each of the spirits, pour in orange juice then lastly pour in the Blue Curacao and stir well.
